Grilled Chicken with Mango Salsa and Sweet Potato Packets

Grilling season has officially arrived!

I’ll be honest, I’ve always enjoying BBQ’d food, but it’s normally been prepared…by others.  I’ve been barbeque-adjacent for several years, after getting a little to close while starting it up and singing the tips of my eyelashes, ha!  Ever since it has been a bit of a house rule that I refrain from going near the grill.  However, I’ve been practicing (with supervision) and managing my clumsiness a bit better 😉

This recipe of a variation of are a summer staple around here and totally delicious.  If for some reason you get rained on, everything can be easily prepared indoors as well, but just not as delicious somehow.

This meal is totally delicious and relatively easy for first-time grillers.  Just remember, safety first!  Open the BBQ lid BEFORE  you turn on the propane and dials (flame adjusters).  And keep your eyelashes far out of reach 😉

Grilled Chicken with Mango Salsa and Sweet Potato Packets

Grilled Chicken

4 organic chicken thighs

Cajun spice mix, OR

Mixture of paprika, turmeric, cumin, child powder, garam masala, black pepper

 

Sweet Potato Packets

2 medium sweet potatoes, diced

3 cloves of garlic, diced

1 Tbsp of olive oil, OR

1 Tbsp of organic butter

Fresh herbs of your choice (oregano, thyme, sage, rosemary, parsley)

Sea salt and pepper

1 long sheet of aluminum foil

 

Mango Salsa

1 ripe mango, peeled and diced

1 medium tomato, diced

1 avocado, insides scooped and diced

Juice of 1/2 to 1 lime

Sea salt and pepper

 

Asparagus

1lbs of fresh asparagus

1 Tbsp olive oil

Sea salt and pepper

 

Instructions

Turn grill on to medium heat to preheat for approximately 5 – 10 minutes. Be aware that each grill can vary quite a bit, so time frames given here are loose guidelines, yours may vary.

 

Grilled Chicken

  • Place chicken thighs on grill and season with spices.
  • Flip to other sides after approximately 5 minutes on grill, and dress opposite side with spices.
  • Cooking time will be around 10 – 15 minutes total, depending on grill. Use meat thermometer to be certain chicken is complete.

 

Sweet Potato Packets

  • Pull out one long sheet of foil, approximately 2 feet.
  • Place diced potatoes lengthwise along middle of sheet of foil in a pile.
  • Dress with all other ingredients.
  • Fold the foil lengthwise and up at the ends so that the packet is sealed and the potatoes can steam while on the grill.
  • Place packet on grill. Total cooking time will be 30 – 40 minutes, depending on the individual grill.
  • Packet is done when sweet potatoes inside packet are soft and fully cooked through.

 

Mango Salsa

  • Mix all ingredients together.
  • Add salt and pepper to taste, store to combine.
  • Serve over chicken thighs (if there is any left after snacking)

 

Asparagus

  • Trim ends from asparagus and place on grill the opposite way as the bars to prevent losing any.
  • Turn after 1 minute on each side, and will be done when asparagus is slightly soft and has grill marks.
  • Pull off BBQ to rest and dress with olive oil along with salt and pepper to taste.

Serve and enjoy!
