6-Ingredient Paleo, No Added Sugar Peanut Butter Banana Cookies

These are little gems, if I do say so myself!

Sometimes you just want a little treat without extra sugar.  Maybe you’re staying away from sugar for health reasons, or you might just want a little somethin’ without breaking the nutritional bank.  These little cookies are the perfect fit in that case.

I’m in the middle of a 21 day sugar detox right now as an experiment we’re going to be talking about on the Fit & Nourished Mind podcast in a few weeks.  For anyone who knows me, this is NOT my usual jam.  I’m not one to promote detoxes, cleanses or any other short term solution, plus dark chocolate and the occasional cupcake are my all time favourites and I build treats like this into the way I eat on a regular basis.

In fact, this seems to be so well known that I threw up a poll on Instagram asking if people thought I could make it for 3 full weeks without dark chocolate and 40% of the answers were no, which was hilarious!

However, I also really like self experimentation and I haven’t done anything like this in a really, really long time so we’ll see how the next couple of weeks go.  There will be more coming on the results of this experiment here on the blog as well, stay tuned!   This is definitely an interesting experience and bringing up a lot of things for me that I can’t wait to share.

In the meantime, to try and make up for missing my other usual indulgences, I wanted to come up with a recipe that would feel a little extra special without going off of the sugar detox.

Optional add:  if you want a little extra something without adding any sugar, you can whisk around 1 – 2 Tbsps. of cacao powder into a little melted coconut oil and drizzle over the cookies.  It’s pretty subtle but adds a hint of chocolatey deliciousness!

 

6 Ingredient Paleo, No Sugar Added Peanut Butter Banana Cookies
These cookies have no added sugar other than the natural sweetness of the bananas and coconut flour. Easy to whip up in a pinch since they are so quick and only require 6 main ingredients! To take them to the next level, you can add chocolate chips or drizzle chocolate over the cookies.

INGREDIENTS
 
 
INSTRUCTIONS 
  1. Preheat oven to 350 degrees F. Mash the peeled bananas in a bowl with a fork. Add in the peanut butter, eggs and vanilla and stir together. Add the coconut flour, baking soda and sea salt and stir to combine. Scoop out spoonfuls one at a time, roll in your hands and press down onto parchment paper. Makes approximately 12 - 14 cookies. Put into oven and bake for 10 minutes. Allow to cool and serve! Optional: chocolate chips, or melt chocolate to do a drizzle over the cookies.
